The "La Court Vit" 2022 cuvée is one of Domaine Goisot's flagship wines. This wine comes from a historic "lieu-dit" located at the top of a slope with Kimmeridgian marl soil, extremely rich in fossils. Thanks to an exemplary biodynamic (Demeter certified) viticulture, Guilhem Goisot manages to extract a rare concentration and elegance. The 2022 vintage, sunny and balanced, offers a perfectly ripe Pinot Noir here, capable of combining a fleshy texture with a vibrant mineral tension, the unmistakable signature of the domaine.
Sensory Profile With a deep and brilliant ruby color, this wine opens with a complex and intense nose of black cherry, wild blackberry, and peony, underlined by notes of white pepper and crushed rock. On the palate, the attack is dense and silky. The tannins are remarkably fine, perfectly integrated into a rich yet always ethereal body. The finish is long, marked by a saline freshness that lengthens the wine and gives it extraordinary persistence.
Philosophy and Winemaking Respect for life is at the heart of the production of this cuvée. Harvesting is manual with rigorous selection. In the cellar, intervention is minimal: fermentation with indigenous yeasts and prolonged aging in French oak barrels (without dominant new wood) to preserve the fruit's brilliance. This wine is neither fined nor filtered, to maintain all its vital energy and natural complexity.
Food Pairings This great Burgundy Pinot Noir will wonderfully accompany a grilled beef steak, a herb-crusted leg of lamb, or small feathered game. It is also ideal with dishes based on wild mushrooms or aged cheeses such as Brillat-Savarin.
