Energy and Mineral Purity

The Saint-Romain "Sous Roche" 2022 from Domaine Henri & Gilles Buisson is a masterful interpretation of high-altitude Pinot Noir. The name itself, "Under the Rock," evokes the vineyard's location on poor, very stony, limestone-rich soil. Thanks to biodynamic farming, the Buisson brothers manage to capture all the energy of this place in the bottle. The 2022 vintage offers ripe and juicy fruit, which blends perfectly with Saint-Romain's typical citrusy freshness and minerality.

Sensory Profile In the glass, it presents with a lively, transparent ruby red color. The olfactory bouquet is of great finesse: notes of crisp small red fruits like redcurrant and raspberry stand out, combined with floral hints of wild rose and a distinct chalky and mineral trace. On the palate, the entry is direct and vibrant. The tannic structure is subtle and well-defined, supported by a refreshing acidity that makes the sip long and dynamic. The finish is savory, almost saline, with a very persistent fruity return.

Philosophy and Winemaking This wine is the result of artisanal work that respects the environment. The grapes are hand-harvested and carefully selected. Fermentation occurs spontaneously with indigenous yeasts, with a portion of whole cluster to enhance aromatic freshness. Aging takes place in French oak barriques (with minimal use of new wood) for about 12 months, allowing the wine to stabilize naturally without losing its mineral tension. No invasive fining or filtration is carried out.

Food Pairings Its pronounced freshness makes it ideal with white meat dishes, such as herb-crusted rabbit or roasted free-range chicken. It also pairs magnificently with high-quality charcuterie, beef tartare, or mushroom dishes. Try it with fresh goat cheese to enhance its mineral component.
