Cantina di Bolzano's Silvaner 2023 is an ode to the freshness of the Alto Adige region. Produced with grapes from the sunny and breezy slopes of the Valle Isarco, this white wine stands out for an aristocratic aromatic profile and an extremely dynamic drinkability. The 2023 vintage benefited from excellent diurnal temperature variation, allowing the Silvaner to develop a vibrant acidity and crystalline aromas that speak of the mountains in every sip.
Sensory Profile In the glass, it presents a clear straw yellow with brilliant greenish reflections. The nose is delicate and refined: it opens with notes of green renetta apple and fresh pear, followed by hints of wild herbs, freshly cut hay, and a subtle trace of elderflower. On the palate, the entry is dry, crisp, and pleasantly savory. The structure is lean but endowed with a beautiful mineral persistence that evokes wet stone. The finish is clean, fresh, and with a slight citrus return.
Philosophy and Vinification The grapes are hand-picked and softly pressed. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the integrity of the primary aromas of the varietal. Aging continues in steel on fine lees for several months, a choice that gives the wine a slight creaminess without ever affecting its natural freshness and the typical minerality of the schist and gravel soils of the Valle Isarco.
Food Pairings It is the ideal wine to accompany light appetizers, white Terlano asparagus with Bolzano sauce, speck dumplings in broth, or grilled freshwater fish. Also excellent as an aperitif or paired with vegetarian dishes and fresh mountain cheeses.
