Made from a skillful blend of Pinot Blanc and Auxerrois, this Crémant comes from vineyards located on predominantly calcareous soils, which give the wine a solid structure and a distinct minerality. The name "Mayerling" evokes nobility and tradition, reflecting the style of a sparkling wine that makes finesse its distinctive feature. Sensory Profile It presents a brilliant straw yellow color and an extremely fine, persistent, and lively perlage. Winemaking and Aging The grapes are harvested manually and pressed with extreme delicacy. After the first fermentation in steel at controlled temperature, the cuvée is created. Secondary fermentation takes place in the bottle according to the traditional method, followed by aging on lees for at least 12-15 months. This resting period in the cellar allows the wine to acquire complexity and that carbonic softness that makes it so harmonious.
