Champagne Charles Mignon - Premium Reserve Brut: The Elegance of Épernay

The Premium Reserve Brut cuvée is Charles Mignon's stylistic manifesto. This Champagne is born from a skilful blend of Pinot Noir and Chardonnay from the best crus of the Vallée de la Marne and the Côte des Blancs. Characterized by vibrant freshness and impeccable balance, it is a sparkling wine that focuses on the finesse of its perlage and aromatic purity. It is the ideal choice for those looking for a Champagne of great prestige yet capable of maintaining a convivial and harmonious character.

Sensory Profile In the glass, it presents a brilliant straw yellow, crossed by a fine, persistent and dynamic perlage. The bouquet is an invitation to freshness: notes of Reinette apple, citrus and white flowers blend with hints of small pastries and a delicate mineral trail. On the palate, the entry is lively and direct; the structure is supported by a beautiful acidity that enhances the fruity returns, leaving room for a soft, long and pleasantly savoury finish, typical of the region's chalky soils.

Philosophy and Winemaking Maison Charles Mignon adopts an extremely rigorous winemaking process. After alcoholic fermentation in temperature-controlled steel to preserve primary aromas, the wine undergoes malolactic fermentation to gain roundness. The second fermentation in the bottle is followed by aging on the lees in the Maison's chalk cellars for a period of 18-24 months. The expert dosage ensures a perfect balance between the vigour of the fruit and the complexity of the evolution.

Food Pairings It is the quintessential aperitif Champagne, but its structure allows it to beautifully accompany an entire meal. It pairs divinely with raw fish, salmon canapés, steamed crustaceans or delicate white meats. Also excellent with soft, bloomy-rind cheeses (such as Brie or Camembert).
