Champagne Charles Mignon - Premium Réserve Premier Cru
The Excellence of Terroirs
The Premium Réserve Premier Cru cuvée represents the perfect synthesis between the power of the Montagne de Reims and the elegance of the Côte des Blancs. Produced only with grapes from Premier Cru classified communes, this Champagne stands out for its superior depth and mineral persistence. It is a wine that speaks of chalk and history, capable of combining the structure of Pinot Noir with the crystalline finesse of Chardonnay. Ideal for those seeking a Champagne with character, capable of evolving magnificently in the glass.
Sensory Profile In the glass, it presents a deep straw-yellow color with golden reflections, embellished by a very fine and persistent perlage. The nose is complex and layered: it opens with notes of ripe yellow-fleshed fruit (peach, apricot) and candied citrus, then evolves towards warmer hints of brioche, acacia honey, and a subtle chalky mineral note. On the palate, it is broad, creamy, and well-structured; the freshness is vibrant and accompanies the sip towards a long, savory, and extremely clean aromatic finish.
Philosophy and Vinification The grapes are meticulously selected and hand-picked at perfect ripeness. After fermentation in temperature-controlled stainless steel tanks to preserve the purity of the fruit, the wine undergoes malolactic fermentation to soften the acidity. The aging in the underground cellars of Épernay lasts for at least 36 months, a long period that allows for a silky texture and an aromatic complexity typical of great Premier Cru Champagnes.
Food Pairings A Champagne of this caliber requires gourmet pairings. It is perfect with seafood risottos, grilled crustaceans, amberjack tartare, or preparations based on noble white meats like Bresse chicken. Also excellent with bloomy rind or aged French cheeses.
