Champagne Emmanuel Brochet Rosé de Saignée: The Textural Emotion of Mont Benoit
Emmanuel Brochet's Rosé de Saignée Premier Cru is a distinctive, bold, and memorable Champagne. Made exclusively from the renowned "Le Mont Benoit" parcel in Villers-aux-Nœuds, this rosé is crafted using the "saignée" (bleeding) technique: the must remains in contact with the skins for several hours, naturally extracting the deepest color and aromas of the fruit. It is a vibrant wine that captures all the energy of the chalky terroir and the generosity of Pinot Meunier.
Sensory Profile In the glass, it displays an intense and luminous cherry red color. The nose is enchanting: a basket of freshly picked wild berries (wild raspberry, currant, sour cherry) blends with notes of sweet spices and a floral touch of old rose. On the palate, the structure is impressively dense and full-bodied. The vinosity is perfectly balanced by a saline mineral tension and an electric freshness. The perlage is fine, almost creamy, leading to a persistent and flavorful finish.
Brochet's Philosophy True to his biodynamic vision, Emmanuel Brochet vinifies this rosé with minimal intervention. Fermented in oak barrels without filtration or fining, this Champagne expresses the naked truth of the vintage. The Extra Brut dosage is reduced to a minimum, allowing the purity of the fruit and the complexity of the terroir to shine without filters. It is a wine of the highest gastronomy, produced in extremely limited quantities.
Food Pairings This Rosé de Saignée demands dishes with character. It pairs magnificently with duck breast with berries, tuna tataki, spiced pigeon, or low-sugar berry-based desserts. It is also extraordinary with aged cheeses such as an old Comté.
