L'Opiniâtre 2016 is the Champagne for those who accept no compromises. "Stubborn" in name and character, this cuvée represents Sébastien Mouzon's successful challenge: to produce a Grand Cru from Verzenay without the aid of sulfur dioxide and without any final dosage. The result is a Blanc de Blancs of disarming verticality, a "naked" wine that brings all the mineral power of chalk and the energy of biodynamic agriculture to the glass.
Sensory Profile In the glass, it presents a brilliant gold color with very fine bubbles. On the nose, it is an explosion of purity: notes of candied lemon, fresh ginger, and quince merge with an almost tactile chalky and saline undertone. With aeration, hints of toasted almond and dried flowers emerge. On the palate, it is sharp, vibrant, and millimetrically precise. The absence of dosage (Nature) enhances a mineral savoriness that defines its structure, leading to an endlessly fresh and clean finish.
The "Sulfite-Free" Philosophy Made from Chardonnay grapes cultivated using biodynamic methods, L'Opiniâtre ferments spontaneously and ages in small oak barrels.
