The Champagne Pure is Pol Roger's answer to the quest for authenticity and precision. Created to offer a sensation of extreme naturalness, this equal blend of the three classic Champagne grape varieties comes from a meticulous selection of different plots. The Maison's challenge was to achieve a perfectly balanced and harmonious wine without the aid of dosage. The result is a straightforward, sincere, and vibrant Champagne that retains the legendary elegance and creaminess typical of Pol Roger's style, but with a mineral drive and freshness that make it unique.
Sensory Profile In the glass, it appears crystalline, with a brilliant straw yellow color and a very fine and persistent perlage. The bouquet is extremely clean: intense notes of white flowers and fresh citrus fruits blend with mineral hints of flint and a delicate trail of yeasts and toasted bread. On the palate, the entry is striking for its tension and dynamism; the texture is silky, yet supported by a sharp acidity and an almost saline savoriness. The finish is very long, dry, and incredibly refreshing, with a return of grapefruit and bread crust.
Vinification and Aging The blend includes equal parts of Pinot Noir, Pinot Meunier, and Chardonnay. After fermentation in stainless steel at a low temperature (to preserve the varietal aromas), the wine undergoes malolactic fermentation to confer roundness, counterbalancing the absence of final sugar. The Pure ages in the Maison's cellars, located 33 meters deep, for at least 4 years on the lees. At the time of dégorgement, no sugar residue is added (Zero Dosage), allowing the wine and its terroir to speak for themselves.
Food Pairings This is the ideal Champagne for lovers of raw seafood: oysters, sea bass tartare, sashimi, and noble crustaceans.
