The Champagne Falempin Blanc de Noirs is a cuvée with character, made from the white vinification of black grapes, where Pinot Noir provides structure and Meunier lends roundness and fruit. This Champagne is the authentic expression of the Damery terroir: a generous, vinous, and deeply aromatic sip. Compared to classic blends, Falempin's Blanc de Noirs stands out for its greater breadth on the palate, making it not only an excellent aperitif but also a "food-friendly" sparkling wine capable of supporting complex pairings.

Sensory Profile It presents itself in the glass with an intense straw yellow color with golden reflections and a minute and constant perlage. On the nose, the attack is fragrant: notes of small red fruits (raspberry and currant) intertwine with hints of quince and nuances of dry pastry and yeast. On the palate, the entry is broad and powerful; the structure is well defined, supported by a vibrant freshness that balances the natural softness of Meunier. The finish is persistent, with a fruity return and a pleasant mineral trail.

Philosophy and Vinification Maison Falempin meticulously oversees every stage of production with artisanal rigor. The grapes are gently pressed to extract only the free-run juice, avoiding the release of color from the skins. Fermentation takes place in steel to preserve the purity of the fruit. After secondary fermentation in the bottle, the wine rests on its lees in the Maison's underground cellars for a period that allows it to achieve a perfect balance between vigor and refinement.
