Champagne Waris-Larmandier "Haute Volée": The Elegance of High-Altitude Pinot Noir
The "Haute Volée" Blanc de Noirs Champagne is a cuvée of rare distinction, born from the Waris brothers' desire to explore the power and finesse of Pinot Noir through the lens of biodynamics. The grapes come from selected vineyards in the Premier Cru communes of Montagne de Reims and Côte des Bar, cultivated according to strict Demeter principles. It is a wine that defies gravity: despite having the typical structure of a black grape, it maintains that lightness and "artistic" elegance that is the Maison's trademark.
Sensory Profile It presents an intense golden yellow color, with slight coppery reflections typical of Pinot Noir vinified in white. The nose is complex and layered: it opens with notes of small red fruits (currant, raspberry), followed by hints of plum tart, sweet spices, and an almost chalky mineral trail. On the palate, it is an explosion of energy: the structure is broad and fleshy, but is immediately lifted by a vibrant freshness. The finish is savory, long, and extremely clean.
Excellence in Winemaking As with all Waris-Larmandier creations, the human touch is light and respectful. Fermentation occurs with indigenous yeasts and aging in wood contributes to roundness without weighing down the sip. The Extra Brut dosage is chosen to allow the purity of the fruit and the identity of the soil to be the true protagonists in the glass.
Food Pairings This is a sparkling wine of great character, capable of handling complex pairings. It is perfect with a veal fillet with mushrooms, duck à l'orange, or dishes based on black truffle. Also excellent with noble aged cured meats or pressed cheeses such as Comté.
