PRODUCT FEATURES

The Pouilly-Fumé AOC 2025 from Domaine Chauveau is one of the clearest and most vibrant expressions of Loire Valley Sauvignon Blanc. Produced in Saint-Andelain, this wine benefits from a vintage that enhances the typical minerality of the region, offering a sharp, taut, and deeply territorial sip.

Domaine Chauveau - Pouilly-Fumé AOC 2025

Benoit Chauveau's Pouilly-Fumé 2025 is a wine that prides itself on precision. Made from vines cultivated on a mosaic of limestone soils and Kimmeridgian marl, this Sauvignon Blanc embodies the term "Fumé" not for a smoky note from wood (as it is vinified exclusively in steel), but for that characteristic "gunflint" sensation typical of the best terroirs in the area. The 2025 vintage stands out for a masterful balance between significant acidity and crisp fruit, resulting in a vertical, elegant wine with a saline persistence that immediately invites a second sip.

Sensory Profile It is a brilliant straw yellow with vivid greenish reflections. The nose is an example of typicality: it explodes with notes of boxwood, grapefruit peel, and passion fruit, then shifts to more austere hints of chalk dust and wet stone. On the palate, the attack is direct and vibrant; the citrus acidity cleanses the mouth, while the structure reveals itself to be slender but with a beautiful aromatic density. The finish is long, dry, and distinctly mineral.

Winemaking and Aging Harvesting occurs when perfect aromatic maturity is reached to avoid overly vegetal notes. After soft pressing, the must ferments in stainless steel tanks at controlled temperatures to preserve the freshness of the primary aromas. The wine then ages for several months on its fine lees, still in steel, a practice that gives greater volume and complexity to the palate without altering the varietal purity of the Sauvignon Blanc.

Food Pairings It is the perfect pairing for goat cheeses (such as the famous Crottin de Chavignol), but it excels with all seafood: oysters, crustaceans, white fish carpaccio, and sushi. Its freshness also makes it ideal with asparagus-based dishes, herb risottos, or delicate white meats with lemon sauces.
