Mineral Elegance

The Bourgogne Tonnerre "Chevalier d'Éon" 2023 is a Chardonnay of great personality that originates from calcareous soils very similar to those of nearby Chablis. The three Dampt brothers (Emmanuel, Eric, and Hervé) created this cuvée to enhance the finesse and tension typical of the vineyards in the Armançon valley. The 2021 vintage, characterized by a cool climate and slow ripening, yielded a wine with an aristocratic profile, capable of combining vibrant acidity with a savory and profound structure.

Sensory Profile In the glass, it appears a brilliant straw yellow with luminous golden reflections. The bouquet is an intertwining of floral (white hedge flowers) and fruity notes, with green apple, grapefruit, and a delicate hint of fresh almond standing out. The true protagonist, however, is the mineral note of flint that emerges with aeration. On the palate, the entry is direct and taut; the citrus freshness guides the sip towards a savory, clean, and excellently persistent finish, typical of the "northern" style of the Dampt brothers.

Philosophy and Vinification The Chardonnay grapes are harvested by hand and pressed with extreme delicacy. Fermentation takes place in stainless steel tanks at controlled temperatures to preserve the aromatic brilliance and purity of the fruit. Aging "sur lies" (on its lees) gives the wine a slight roundness that perfectly balances the marked acidity of the Tonnerre terroir, without ever resorting to wood aging to maintain maximum expressive transparency.

Food Pairings This is an exceptional white to accompany fish appetizers, oysters, escargots de Bourgogne, and shellfish dishes. It also pairs divinely with soft goat cheeses (such as Saint-Maure) or delicate white meats cooked in light sauces.
