Acqueverdi are mountain spring waters so rich in minerals that they give life to a stream with an extraordinary turquoise-green color. This spectacle can be admired after a two-hour walk from the distillery where Acqueverdi Gin is produced, by climbing the mountain behind it, at about 1,400m above sea level. These waters give the gin its particular taste, and the producers are considering allocating a portion of the proceeds from the gin's sale to the protection and conservation of this wonderful place.
Many of the botanicals, such as alpine rose, mallow, mugo pine, pine buds, and genepy, grow wild in the valley where the Acqueverdi stream flows. The juniper also comes from the Aosta Valley, where it is widespread up to altitudes of 2,400 meters and whose berries are traditionally used to flavor food and prepare herbal teas, jellies, and liqueurs.
The botanicals are infused and macerated in alcohol separately, and then distilled at low temperatures, also separately. The different distillates are then expertly blended, and the whole is brought to an alcohol content of 43% with water from the Acqueverdi spring.
This gin is characterized by a strong minerality conferred by the use of water from the Acqueverdi spring and by the particular notes given by the botanicals typical of the Alps and the Aosta Valley. On the nose, it is very aromatic with hints of juniper and alpine herbs, while on the palate, it is dry and full-bodied, with a good balance between the resinous and floral notes of the herbs.
