Sensory Profile In the glass, it presents an intense and brilliant ruby color. The nose is a complex bouquet of black fruits (blackberry, blueberry) and floral notes of peony, enriched by a hint of black pepper and a mineral trail reminiscent of graphite. On the palate, the attack is silky yet dense. The tannins are noble, dense, and finely polished, supported by a citrusy freshness that masterfully prolongs the sip. The finish is persistent, spicy, and deeply savory.
Philosophy and Winemaking Paul-Henry Pellé adopts a rigorous parcel-by-parcel approach. The grapes are hand-harvested and carefully selected. Winemaking involves a portion of whole cluster to enhance aromatic complexity and freshness. Fermentation takes place with indigenous yeasts, followed by aging for approximately 12-15 months in large French oak foudres and a small part in used barriques. This process preserves the purity of the fruit and the saline imprint of the Kimmeridgian soil.
