PRODUCT FEATURES

Maison Castel Crémant de Bordeaux AOC is a refined sparkling wine that embodies the elegance of the classic method applied to the noble grape varieties of the Bordeaux region. This sparkling wine stands out for its sensory profile, combining citrus freshness with the complexity derived from long aging on the lees, representing a high-class alternative for those seeking a high-quality traditional French method.

Maison Castel - Crémant de Bordeaux AOC (Brut)

Maison Castel's Crémant de Bordeaux is the result of rigorous selection and oenological expertise that respects the strict regulations of the appellation. Produced primarily with Sémillon and Cabernet Franc grapes, this wine follows the "Méthode Traditionnelle," with the second fermentation taking place in the bottle followed by a slow rest in temperature-controlled cellars. Sémillon contributes roundness and floral notes, while Cabernet Franc (vinified as a white wine) adds structure, finesse, and vibrant acidity. It is a Crémant that focuses on balance and precision, offering a fine perlage and aromatic richness that places it at the top of its category.

Sensory Profile Visually, it presents a brilliant straw yellow color, traversed by a fine, numerous, and persistent perlage. On the nose, the bouquet is elegant and complex: it opens with notes of white flowers (hawthorn) and fresh citrus, then evolves towards hints of toasted brioche, almond, and a touch of fresh butter typical of aging on the lees. On the palate, the attack is lively and fresh, with a creamy mousse that envelops the palate. The balance between acidity and structure is perfect, concluding with a long, savory, and pleasantly citrusy finish.

Vinification and Aging Grapes are hand-harvested and gently pressed. After the first fermentation at a low temperature, the cuvée is blended. The second fermentation follows the classic method in the bottle, where the wine rests on its lees for a minimum period of 12 months. This long aging allows for the development of tertiary notes and ensures the finesse of the bubbles, before disgorgement and the final Brut-style dosage.

Food Pairings An extremely versatile and refined wine. It is the aperitif par excellence, ideal for accompanying salmon canapés, oysters, and seafood crudités. At the table, it pairs magnificently with fish-based pasta dishes, herb risottos, or delicate white meats. Also excellent with fresh cheeses or not-too-sweet dry pastries.
