Made from 100% Chardonnay grapes, cultivated in the high-hill vineyards of Vallagarina, this Trento DOC represents the perfect balance between the fruit's fragrance and the complexity derived from aging on the lees. It is a sunny, energetic, and refined sparkling wine, designed for those seeking the authenticity of mountain Metodo Classico.
Sensory Profile In the glass, it presents a brilliant straw yellow color with a fine, numerous, and persistent perlage. On the nose, it is an elegant bouquet: notes of fresh Golden apple and white flowers blend with classic hints of bread crust and a slight hazelnut nuance. On the palate, the entry is direct and lively; the pronounced acidity is well balanced by a soft and creamy structure. The finish is savory, clean, and leaves a pleasant mineral sensation that immediately invites a second sip.
Vinification and Aging The grapes are harvested manually at the perfect degree of ripeness to preserve their acidity. After the first fermentation, the wine rests on the lees in the bottle for at least 24-30 months (well beyond the minimum required by the regulations), acquiring the finesse and aromatic complexity that make Trento DOC famous worldwide.
