The Prenzep Trento DOC Extra Brut is a Classic Method sparkling wine of great elegance and precision, embodying Trentino's excellent winemaking tradition. Produced with grapes cultivated at high altitudes, this sparkling wine stands out for its sharp freshness and rigorous structure, characteristics enhanced by its low sugar dosage.
Prenzep - Trento DOC Extra Brut
The Trento DOC Prenzep Extra Brut originates from selected vineyards located on the hills overlooking the Adige Valley, where the significant temperature difference between day and night promotes the development of an intense aromatic profile and preserves a vibrant acidity. Produced mainly from Chardonnay grapes (with possible addition of Pinot Noir depending on the vintage), this sparkling wine faithfully adheres to the Trentino Classic Method regulations.
After a gentle pressing of the grapes and the first fermentation in steel tanks, the base wine undergoes a second fermentation in the bottle, followed by a long aging on the lees in cool underground cellars. The choice of the Extra Brut category (with minimal residual sugar) highlights the purity of the fruit and the minerality of the soil, offering a vertical, clean, and highly characterful sip, ideal for lovers of taut and gastronomic sparkling wines.
Sensory Profile
-
Color: Pale straw yellow with bright reflections. The perlage is very fine, abundant, and exceptionally persistent.
-
Nose: Fresh and multifaceted on the nose. Initial notes of bread crust, yeast, and toasted almond give way to hints of green apple, yellow citrus (cedar and bergamot), and a distinct chalky mineral trace.
-
Palate: On the palate, it is direct, energetic, and sharp. The pronounced acidity is perfectly integrated with a creamy structure given by the long contact with the lees. The sip is savory, dry, and regenerating.
-
Finish: Long and clean, with a decidedly mineral and citrusy finish that immediately invites another sip.
Food Pairings Its dry nature and pronounced savouriness make it an exceptional gastronomic wine. It is perfect as an elite aperitif, but it performs best throughout a meal paired with raw seafood, oysters, fish tartare, fried seafood platters, and medium-aged hard cheeses.
