Rocca di Frassinello's Vermentino 2024 is a white wine that captures the essence of the Tuscan coast: light, sapidity, and Mediterranean scrub. Cultivated on soils rich in skeleton and clay, it benefits from the sea breezes that mitigate summer heat, preserving a vibrant freshness. The 2024 vintage yielded beautifully healthy grapes, resulting in a wine of excellent aromatic intensity and great taste precision. It is a Vermentino that is not content with simplicity, but seeks a complexity almost "of a great white," while maintaining that lively and marine drinkability that makes it irresistible.
Sensory Profile In the glass, it presents a luminous straw yellow with brilliant citrus reflections. The bouquet is an explosion of Mediterranean aromas: notes of yellow flowers, broom, and grapefruit peel stand out, accompanied by hints of aromatic herbs like rosemary and sage. A clear mineral and brackish trace emerges on the finish. On the palate, the entry is fresh and dynamic; the structure is solid, supported by an almost saline sapidity that gives rhythm and depth to the sip. Vinification and Aging The grapes are harvested manually and carefully selected. Fermentation takes place in stainless steel tanks at controlled temperatures for about 15-20 days, in order to extract and preserve the varietal aromatic precursors. The wine ages exclusively in steel on its fine lees for about 6 months, followed by a short rest in the bottle. This technical choice allows the freshness of the fruit and the typical minerality of the Maremma terroir to remain intact, while also imparting a pleasant softness.
Food Pairings An extremely versatile white, ideal for accompanying all seafood cuisine. It pairs magnificently with shellfish appetizers, fish tartare, spaghetti allo scoglio, and baked fish with aromatic herbs.
