Scrimaglio's Alta Langa 2021 is a vintage Metodo Classico of great character and precision. Made from a skillful blend of Pinot Noir and Chardonnay, this wine comes from vineyards located over 250 meters above sea level, where significant temperature variations favor the development of a delicate aromatic profile and a marked acidity. The 2021 vintage, characterized by optimal climatic balance, allowed for the production of sparkling wine bases of rare purity. The choice of the Pas Dosé version (without added sugars in the final dosage) highlights Scrimaglio's desire to present a straightforward, honest wine deeply connected to the minerality of Piedmont's marly-calcareous soil.
Sensory Profile Visually, it presents a brilliant straw yellow color, traversed by a very fine, dense, and persistent perlage. On the nose, it strikes with its complexity: fragrant notes of bread crust, yeast, and toasted hazelnut intertwine with hints of white-fleshed fruit, citrus, and a delicate mineral trace reminiscent of flint. Vinification and Aging The grapes are hand-picked into crates and pressed whole very gently. The fermentation of the sparkling wine base takes place in steel tanks at controlled temperatures. After bottling, the wine undergoes a second fermentation in the bottle and rests on its lees for a minimum of 30-36 months in the estate's cool cellars. This long resting period allows for the development of a silky foam and the aromatic complexity that is the hallmark of Alta Langa.
Food Pairings This is a versatile sparkling wine of great character. Excellent as a high-level aperitif, it finds its maximum expression at the table with complex fish dishes, shellfish, herb risottos, or Fassona beef tartare.
