The Sei Uno is a testament to excellent viticulture that looks beyond the classic Prosecco schemes. Born in the "cru" Rive di Carpesica, where steep slopes necessitate entirely manual labor, this sparkling wine defies time with almost two years on its lees. The 2022 vintage provided raw material of great balance, which the choice of Extra Brut (almost zero) dosage reveals in all its purity. It is a wine of "tension," where the citrusy freshness of Glera meets the evolutionary depth given by prolonged contact with the yeasts. A Prosecco Superiore dedicated to the most discerning palates, who seek verticality, sapidity, and an almost sharp mineral character.

Sensory Profile In the glass, it presents a deep straw yellow with brilliant golden reflections; the perlage is very fine, tight, and extremely elegant. The bouquet is complex and layered: the classic notes of green apple and pear give way to more evolved hints of bread crust, fresh yeast, toasted almond, and a distinct chalky sensation. On the palate, the entry is striking for its dryness and verticality. The structure is significant, supported by an almost saline sapidity that extends the sip masterfully. The finish is dry, austere, and remarkably persistent.

Vinification and Aging The grapes come exclusively from the single "Riva" of Carpesica, hand-picked into small crates. After the first fermentation at controlled temperature, the secondary fermentation (prise de mousse) takes place in an autoclave but with a revolutionary timing: the wine rests for 22 months on its lees. This very long aging allows the CO2 to integrate finely and enriches the organoleptic profile with tertiary notes typical of great sparkling wines, while maintaining the varietal fragrance of the region of origin.
