This Blanc de Blancs, the result of an extreme aging process of 67 months on its lees, is a tribute to the constellation of Orion (Saiph is one of its brightest stars) and aims for a complexity that only long periods of aging can impart.

The Saiph is the result of an ambitious vision: to demonstrate that the territory of Vittorio Veneto can produce international-class sparkling wines using the bottle refermentation method. Made from white grape varieties selected from the most suitable vineyards in Carpesica, this sparkling wine rests for over five years (67 months) in the darkness of Bellenda's cellars. The choice of Extra Brut dosage is fundamental to avoid masking the incredible aromatic evolution achieved during the long contact with the yeasts. It is a wine of great structure, profound, austere, and incredibly elegant, dedicated to those who seek not only freshness in their glass, but a story of patience and oenological precision.

Sensory Profile In the glass, it presents a brilliant golden yellow, traversed by a very fine, continuous, and extremely silky perlage. The bouquet is broad, evolved, and of great charm: it opens with intense notes of small pastries, melted butter, and toasted bread crust, which fade into hints of dried fruit (hazelnut and almond), acacia honey, and a delicate touch of candied citrus. On the palate, the entry is powerful, creamy, and enveloping; the freshness is still surprisingly vibrant and intertwines with a deep mineral savoriness. The finish is very long, aristocratic, leaving a trail of toasted and chalky notes.

Winemaking and Aging The grapes are hand-picked and vinified with extreme care to obtain a base sparkling wine of the highest quality. After the first fermentation, the wine is bottled with selected yeasts for secondary fermentation according to the Metodo Classico. The aging on the lees lasts for 67 months, a period during which yeast autolysis occurs, giving the wine its characteristic complexity and structure. After disgorgement, the wine rests further in the bottle before release to achieve the perfect taste balance.

Food Pairings A sparkling wine for grand occasions and for the whole meal. Its important structure makes it perfect for accompanying complex seafood and land dishes: seafood risotto, grilled noble crustaceans (lobster, spiny lobster), truffle white meats, and baked fish with elaborate sauces. Excellent with aged goat or cow cheeses (such as Parmigiano Reggiano aged over 48 months). It is a sparkling wine that also beautifully supports spicy fusion cuisine preparations.
