Sensory Profile In the glass, it presents a brilliant golden yellow with amber reflections; the perlage is very fine, tight, and extremely persistent. The bouquet is broad, evolved, and very charming: it opens with notes of ripe yellow fruit and candied orange peel, which immediately give way to complex hints of toasted brioche, crunchy almond, chestnut honey, and a slight trace of saffron. On the palate, the entry is powerful, broad, and enveloping. The mousse is creamy and perfectly integrates a noble acidic tension. The finish is very long, dry, and savory, with mineral and small dry pastry notes.
Vinification and Aging The grapes are selected from the Maison's oldest vineyards in Brugny. Fermentation takes place in stainless steel tanks at controlled temperatures to preserve the purity of the fruit. After disgorgement, the bottles rest in the dark cellars for at least 6 years on the lees. This long contact with the yeasts transforms the wine's structure, giving it the silkiness and aromatic complexity that only time can impart. The Extra Brut dosage ensures a dry and absolutely clean finish.
