The 2024 Petit Chablis from Domaine Baudouin Millet is the most immediate and mineral expression of Chardonnay cultivated in the soils of Chablisien. This cuvée, born from vineyards located on the calcareous plateaus overlooking the Serein valley, perfectly embodies the Maison's style: precision, fresh citrus notes, and a crystalline cleanliness that invites drinking.
Baudouin Millet - Petit Chablis AOC 2024: Purity and Tension
Baudouin Millet's Petit Chablis 2024 is a wine that focuses entirely on verticality. Although the "Petit" designation might suggest a lesser wine, the Domaine's expert hand transforms these grapes into a white wine of great dignity and character. The 2024 vintage has preserved a distinct acidity and a vibrant aromatic profile, typical of the Portlandian soils (hard and compact limestone) where these vines are rooted. It is the Chablis of conviviality: straightforward, taut, and deeply connected to its mineral matrix, capable of offering a lively drink without sacrificing a subtle and never ordinary elegance.
Sensory Profile In the glass, it presents a brilliant straw yellow with luminous greenish reflections. The bouquet is a hymn to freshness: crisp notes of green apple, lime zest, and white grapefruit intertwine with delicate hints of white flowers and a distinct flinty trail. On the palate, the entry is direct, almost sharp, supported by a vibrant acidity that cleanses the palate. The structure is lean but endowed with an almost saline savoriness that prolongs the sip. The finish is dry, persistent, and refreshing, with a very pleasant citrus return.
Vinification and Aging Chardonnay grapes are harvested at perfect ripeness to balance their natural acidity. Fermentation takes place in stainless steel tanks at controlled temperatures to preserve the integrity of the varietal aromas and the purity of the fruit. Aging continues exclusively in steel on fine lees for approximately 6-8 months; this technical choice allows the wine's "crisp" freshness to be maintained while also imparting a slight roundness that balances the typical acidic tension of the Chablis terroir.
Food Pairings It is the ideal companion for aperitifs and all raw seafood dishes: oysters, sea bass tartare, and scallop carpaccio. It pairs magnificently with grilled crustaceans, escargots bourguignonne, and fresh goat cheeses. Thanks to its acidity, it is also perfect to accompany light fried fish or dishes based on asparagus and eggs.
