Des Carlines' Crémant du Jura is the result of a skillful blend (typically Chardonnay-based with a small percentage of Savagnin) from vineyards cultivated on marl and limestone soils. The Domaine's philosophy, based on purity and minimal interference, results in a sparkling wine of great mineral tension. The choice of Extra Brut dosage is fundamental to allow the quality of the raw material and the identity of the soil to emerge unfiltered. It is a sparkling wine that combines the creaminess of long aging on the lees with the acidic vivacity typical of the Jura's cool climate, placing it qualitatively at the top of the appellation.

Sensory Profile In the glass, it presents a brilliant straw yellow with silvery reflections; the perlage is very fine, persistent, and lively. The bouquet is complex and fragrant: it opens with notes of green apple, lemon zest, and white flowers, then evolves towards hints of brioche, fresh almond, and a distinct chalky trace. On the palate, the entry is straight, almost sharp, but immediately balanced by a silky and enveloping mousse. The finish is long, dry, and markedly savory, with a citrus return that constantly invites another sip.

Vinification and Aging The grapes are harvested manually in small crates to preserve the integrity of the bunches. After a gentle pressing, the first fermentation takes place in steel tanks and, in part, in old oak barrels to impart complexity. The secondary fermentation occurs in the bottle according to the Metodo Classico (Traditional Method). The wine rests on its lees for a period typically ranging from 18 to 24 months, allowing the development of autolytic notes without overpowering the freshness of the fruit. The low final dosage ensures a dry and rigorous profile.
