The 2021 vintage has endowed this label with a vibrant freshness and a particularly crisp fruitiness.
Il Cascinone - Alasia Alta Langa DOCG Millesimato Brut Rosé 2021
The Millesimato Brut Rosé "Alasia" originates from the selection of the finest Pinot Noir grapes cultivated in Il Cascinone estate's highest and coolest vineyards. The uniqueness of this Rosé lies in the perfect balance between brief skin maceration, which imparts its characteristic pale pink color, and long aging on the lees, which shapes its body. The 2021 vintage stands out for its exemplary aromatic clarity: a wine that does not seek power for its own sake, but rather focuses on verticality and fragrance. It is a sophisticated Alta Langa, capable of expressing the most delicate and mineral side of Piedmontese Pinot Noir.
Sensory Profile Visually, it presents an elegant, luminous powder pink color with onion skin reflections. The perlage is extremely fine, constant, and very lively. On the nose, it opens with a fragrant bouquet of small red berries (currant, raspberry, and pomegranate), enriched with delicate notes of rose petals and a subtle hint of bread crust and yeast. With aeration, mineral nuances and a touch of sweet spice emerge. On the palate, it is fresh, taut, and of excellent structure; the bubbles are creamy and enveloping, supported by a distinct acidity that lengthens the sip towards a savory and pleasantly citrusy finish.
Vinification and Aging The grapes are hand-harvested and subjected to a soft pressing after a very brief cold maceration to extract the desired color. The first fermentation takes place in steel tanks at controlled temperatures. The secondary fermentation occurs in the bottle according to the Metodo Classico, followed by aging on the lees for at least 30-36 months. This period of rest in the dark, cool cellars allows for the development of harmonic complexity and an extremely fine mousse.
Food Pairings This Rosé is perfect for accompanying elite aperitifs, but it truly shines with more structured seafood dishes: fish stews, grilled crustaceans, smoked salmon, and tuna carpaccio. It also pairs beautifully with traditional Piedmontese dishes, such as vitello tonnato, or with medium-aged cheeses. Its elegance also makes it ideal for accompanying mushroom-based dishes or pasta dishes with savory white sauces.
