PRODUCT FEATURES

The Alta Langa Millesimato Riserva "Alasia" 60 Mesi 2020 represents the production zenith of Il Cascinone. It is an exceptional sparkling wine, designed for those seeking the ultimate expression of time applied to the Piedmontese terroir. With five years of aging on its lees, this Riserva transforms the original freshness of the high-altitude vineyards into an aristocratic complexity, positioning itself at the top of the denomination for its structure and depth.

Il Cascinone - Alasia Alta Langa DOCG Millesimato Riserva 60 Mesi 2020

The Millesimato Riserva 60 Mesi is the result of extraordinary enological patience. Produced exclusively in the best vintages, such as 2020, this wine is made from an extreme selection of Pinot Noir and Chardonnay grapes grown in the estate's most suitable vineyards. The very long aging on the lees — a full five years — allows for a perfect integration of the fruity and tertiary components, creating a sip that is both powerful and incredibly silky. It is an "Alta Langa for meditation" or for grand gastronomy, capable of expressing the noble evolution of the Piedmontese Metodo Classico through a rich aromatic profile and a monumental structure.

Sensory Profile Visually, it presents an intense, brilliant golden yellow color, with an extremely fine, slow, and almost hypnotic perlage in its continuity. The nose is a layered sensory experience: deep notes of toasted brioche, mountain butter, and hazelnut merge with hints of ripe yellow fruit, dates, and a light note of chestnut honey. Mineral and undergrowth nuances emerge on the finish. On the palate, it is broad, majestic, and of great volume. The creaminess of the foam envelops the palate, while a distinct sapidity and still-intact freshness guide the wine towards an infinitely persistent finish, with returns of bread crust and vanilla.

Winemaking and Aging The grapes are hand-harvested and pressed with extreme delicacy. Only the free-run must is used for this Riserva. After the first fermentation in steel and a partial aging in wood to add structure, the wine is bottled for the secondary fermentation. The aging on the lees extends for at least 60 months in the estate's underground cellars. The final disgorgement is carried out with minimal dosage, aimed at preserving the purity of the evolution and the integrity of the 2020 vintage.

Food Pairings A wine of this caliber requires equally complex dishes. It is extraordinary with grand baked fish dishes with potato crust or truffle, rich first courses like tajarin with 40 egg yolks and farm ragù, or very long-aged cheeses like 36-month Parmigiano Reggiano or Castelmagno. Its richness also allows it to elegantly accompany noble white meat dishes, such as guinea fowl or seared foie gras.
