The Montebello Rhum Vieux 8 Ans marks the distillery's entry into the category of grand reserves. It is an Agricole Rum of extraordinary complexity, where the exuberance of sugarcane juice gives way to an aristocratic structure dominated by tertiary notes. At this stage of aging, the Master Distiller's hand and the influence of Basse-Terre's tropical climate create a deep, dark, and incredibly seductive spirit.
Montebello - Rhum Vieux Agricole 8 Ans
The Montebello 8 Years Old represents the perfect stylistic maturity of the Carrère distillery. Made from the distillation of pure, hand-harvested sugarcane juice, this rum undergoes eight years of aging in small American oak barrels. Thanks to Guadeloupe's high temperatures, the interaction between the wood and the distillate is at its peak: the rum "breathes" intensely, concentrating aromas and developing a velvety texture. It is a rum dedicated to connoisseurs, capable of offering a layered sensory experience where the typical fermentation notes of Agricole evolve into a bouquet of dark spices and noble woods.
Sensory Profile
-
Color: Intense amber with warm copper and mahogany reflections.
-
Nose: The nose is powerful and complex. It opens with intense notes of candied fruit and dried plums, fading into aromas of dark chocolate, roasted coffee beans, and oriental spices (cloves and nutmeg). A light hint of smoky oak completes the aromatic profile.
-
Taste: On the palate, it is dense and enveloping. The attack is majestic, with a perfect balance between the sweetness of brown caramel and the strength of toasted wood. The volcanic minerality of the Montebello terroir emerges in the finish, providing an unexpected freshness that cleanses the palate. The finish is very long, with returns of leather, vanilla, and cigar box.
Production Process After column distillation of vesou (sugarcane juice), the rum is aged for 8 years in ex-Bourbon barrels. During this period, constant monitoring of the barrels ensures that the rum maintains its elegance despite significant evaporation. Bottling occurs with a slight reduction to preserve all the aromatic power built over nearly a decade of resting.
Serving Suggestion A rum of this caliber should be enjoyed neat, preferably in a large tasting glass to encourage oxygenation. It is ideal as a companion to a fine cigar or paired with extra-dark chocolate (85% cocoa) and praline dried fruits.
