The Calinverno 2021 is the Cottini family's "heartfelt" wine, a red of great personality that challenges Valpolicella conventions. Born from Giancarlo Cottini's intuition, this IGT represents the union of the appassimento technique and the pursuit of a modern, deep, and incredibly velvety structure.

The Calinverno 2021 owes its evocative name to the particular harvest time: the grapes are left to overripen on the vine and picked only at the beginning of winter, when the first frosts "descend" upon the vineyards. This slight drying on the vine, combined with a selection of grape varieties that includes classic native grapes (Corvina and Rondinella) alongside international ones (Cabernet Sauvignon and Merlot), gives rise to a wine of rare concentration. The 2020 vintage offered a masterful balance, where the extractive power is balanced by a balsamic freshness that makes the sip aristocratic and never excessive. It is a meditation red, capable of narrating the most intimate and nocturnal side of the Veronese territory.

Sensory Profile In the glass, it presents an impenetrable ruby red with elegant garnet reflections. The bouquet is a complex mosaic: intense notes of blackberry jam, morello cherry, and infused plum blend with hints of dark chocolate, pipe tobacco, and sweet spices like cinnamon. The characteristic note of undergrowth and licorice defines its depth. On the palate, the entry is majestic, warm, and enveloping; the tannic texture is dense yet surprisingly silky. The finish is very long, savory, and concludes with returns of ripe black fruits and noble toasted notes.

Vinification and Aging The grapes are harvested late (late October/early November) after partial natural drying in the vineyard. This is followed by slow fermentation at controlled temperature to extract the maximum polyphenolic content. The wine ages for about 24 months in barriques and oak barrels, followed by a long rest in the bottle. This maturation process allows Calinverno to evolve its powerful structure into a complex and harmonious elegance, ensuring exceptional longevity.

Food Pairings A wine that favors richly structured dishes: large beef roasts, Veronese stews, game (such as deer or wild boar), and dishes enriched with red wine reductions. It is the ideal companion for aged and flavorful cheeses or to be sipped at the end of a meal as a conversation wine, perhaps accompanied by a piece of high-percentage dark chocolate.
