The Valpolicella Ripasso Superiore "Sa Solin" 2022 by Montezovo represents the ideal link between the freshness of vintage Valpolicella and the majesty of Amarone. Produced with the ancient "ripasso" technique, this wine inherits structure and complexity, while maintaining extraordinary drinkability and a deeply territorial character.
Montezovo - Valpolicella Ripasso Superiore "Sa Solin" DOC 2022
The Ripasso "Sa Solin" 2022 is a wine of great balance and richness. Its name refers to the calcareous and stony soils (the "solin") where the native Corvina, Corvinone, and Rondinella grapevines are rooted. The peculiarity of this wine lies in its production: the base Valpolicella is refermented on the warm, sugar-rich pomace of freshly pressed Amarone. This process enriches the wine with noble tannins, color, and hints of dried fruit, giving it a "Superiore" structure and a velvety softness that has made it one of the most appreciated red wines of the Cottini family.
Sensory Profile In the glass, it presents a deep ruby red with garnet reflections. The bouquet is intense and layered: notes of sour cherry in spirits, ripe plum, and wild berries stand out, evolving into tertiary hints of vanilla, dark chocolate, and a delicate trace of sweet tobacco. On the palate, the entry is warm and full; the structure is solid, but the tannins are perfectly integrated and silky. The mineral salinity typical of the Montezovo terroir balances the natural softness, finishing with a long, clean, and spicy aftertaste.
Winemaking and Aging After the first fermentation in steel, the wine undergoes "ripasso" on the Amarone pomace for about 15-20 days. This is followed by an aging period of approximately 12-18 months in oak barrels of various sizes, where the wine acquires complexity and stability. A further period of rest in the bottle refines its elegance before release, ensuring a harmonious and ready-to-drink wine, yet capable of evolving beautifully over time.
Food Pairings A structured red that prefers intense dishes. It pairs magnificently with grilled red meats, roasts, game, and stews. Excellent with traditional Veronese first courses seasoned with meat sauces (pastissada de caval) or with aged cheeses such as Monte Veronese d'alpeggio. Also ideal with platters of flavorful cured meats.
