The 2019 Lessini Durello is a sparkling wine with a volcanic personality. Durella, a grape variety with thick skin and proverbial acidity, finds its ideal soil in the basaltic terrains between Verona and Vicenza. The 2019 vintage allowed for grapes with a solid structure, perfect for a bottle re-fermentation that enhances the verticality of the sip. After prolonged aging on the lees, the wine sheds its youthful edges to acquire a silky texture, while maintaining that snappy freshness that makes it one of the most dynamic sparkling wines in Italy. It is a "rocky" bubbly, direct and uncompromising, dedicated to those who seek purity and depth.

Sensory Profile In the glass, it presents a brilliant golden straw yellow, crossed by a very fine and persistent perlage. The bouquet opens with citrus notes of cedar and lime, which quickly evolve towards hints of quince and white almond. The characteristic sulphurous mineral note and flint are well present, enriched by nuances of yeast and small pastries. On the palate, the entry is overwhelming: vibrant acidity guides the sip, enveloped by a creamy foam that mitigates its strength. The finish is dry, savory and of very long persistence, with a clean finish reminiscent of grapefruit.

Winemaking and Aging The grapes are hand-picked and gently pressed. The first fermentation takes place at controlled temperatures to preserve the primary aromas. The secondary fermentation occurs in the bottle according to the Metodo Classico, followed by aging on the lees for at least 36 months (or longer depending on the specific disgorgement for the vintage). This long contact helps stabilize the natural acidity of Durella, lending aromatic complexity and an elegant and persistent structure.

Food Pairings It is the ideal sparkling wine to accompany fatty or subtly sweet dishes that require a radical cleansing of the palate. It pairs beautifully with Baccalà alla Vicentina, fried seafood (paranza) and typical Venetian cured meats such as soppressa. Excellent with aged alpine cheeses and pasta dishes based on crustaceans or mollusks.
