Compared to the 72-month Riserva version, this cuvée focuses on citrus freshness and immediate volcanic minerality, while maintaining the complexity typical of three years of aging on lees.

The Lessini Durello 36 Months 2020 is a sparkling wine of great energy, born from the basaltic and volcanic soils of the Lessini Mountains. The native Durella grape, known for its almost "electric" acidity and tough skin, finds a perfect balance in this version: the long rest on the lees smooths its edges, transforming the grape's strength into a creamy and refined sip. The 2020 vintage yielded grapes of splendid health and acidic tension, resulting in a lively, savory, and deeply territorial sparkling wine, ideal for those seeking an alternative with character and personality to classic national sparkling wines.

Sensory Profile In the glass, it presents a brilliant straw yellow with golden reflections and a very fine, dense, and persistent perlage. The bouquet is fresh and pungent: notes of green apple, cedar peel, and grapefruit stand out, accompanied by hints of wildflowers, bread crust, and a clear mineral streak reminiscent of flint. On the palate, the entry is vertical and taut; the vibrant acidity is enveloped by a silky mousse that provides a smooth yet well-structured drink. The finish is dry, clean, and leaves a pleasant saline sensation.

Winemaking and Aging Durella grapes are harvested manually and vinified with soft pressing at a controlled temperature. After the cuvée is created, secondary fermentation takes place in the bottle according to the Metodo Classico. The wine ages on its lees in the darkness of the cellar for at least 36 months (3 years). This time allows the bubbles to integrate perfectly and the wine to acquire aromatic complexity, while maintaining the original vigor and freshness of the fruit.

Food Pairings An extremely versatile and gastronomic sparkling wine. It is the ideal companion for fried baccalà, "sarde in saor" (sardines in sweet and sour sauce), and all flavorful seafood dishes. Excellent with typical Venetian cured meats (such as soppressa) and medium-aged cheeses. Thanks to its pronounced acidity, it is perfect for "cleansing" the palate from fatty dishes such as fried fish or vegetable tempura.
