The Cottini family has bet on the extraordinary evolutionary capacity of the Durella grape, subjecting it to a rest of no less than six years in their cellars. The 2018 vintage has given this Riserva a solid structure and an extractive richness that time has smoothed, without affecting the sharp freshness that constitutes its DNA. It is a sparkling wine for connoisseurs: vertical, deep and vibrant, capable of narrating the minerality of basaltic rock with crystalline precision.
Sensory Profile In the glass, it shines with an intense golden yellow with brilliant reflections, enlivened by a very fine, creamy, and extremely persistent perlage. The bouquet is broad and layered: the initial citrus note of cedar and grapefruit gives way to complex hints of toasted dried fruit, acacia honey, and freshly baked bread crust. The mineral texture is evident, with sulphurous and hydrocarbon notes typical of volcanic soils. On the palate, it is an explosion of energy: the citric acidity is masterfully integrated into a velvety and savory structure. The finish is infinite, clean, and deeply saline.
Winemaking and Aging The Durella grapes are hand-picked and pressed with extreme delicacy. Fermentation takes place at a controlled temperature and, after the creation of the cuvée, re-fermentation in the bottle begins according to the Metodo Classico. The wine rests on its lees for at least 72 months (6 years) in the silence of the Montezovo cellars. This long contact allows the bubbles to become minute and persistent, and the aromatic profile to be enriched with noble tertiary notes, while maintaining the original acidic tension.
Food Pairings A full-bodied sparkling wine that is not afraid of bold pairings. It is the ideal companion for Baccalà alla Vicentina or substantial seafood fries. Excellent with rich and flavorful dishes such as cotechino or zampone, which are perfectly cleansed by its acidity. It pairs magnificently with aged cheeses (Monte Veronese d'alpeggio) and dishes based on white truffle.
