San Fermo is a tribute to the viticultural tradition of Vittorio Veneto, born from vineyards located in a hilly area characterized by stony and clayey soils. Unlike the Extra Dry version, Bellenda's Brut opts for precision and dryness. The goal is to let the terroir express itself without sugary filters, focusing on a vibrant acidic backbone and a solid structure. It is a modern, dynamic, and deeply gastronomic Prosecco Superiore, capable of combining the floral elegance of Glera with a saline persistence that recalls the glacial origins of its lands.
Sensory Profile In the glass, it shines with a pale straw yellow with luminous greenish reflections; the perlage is very fine, lively, and very persistent. The bouquet is a hymn to citrus freshness: it opens with clear notes of green apple, Kaiser pear, and cedar peel, enriched by delicate hints of acacia flowers and a distinct mineral trail. On the palate, the entry is dry, direct, and crisp. The carbonic acid is creamy and well integrated, while the citrus acidity guides the sip towards a clean, savory, and pleasantly almondy finish.
Vinification and Aging The grapes are hand-picked and carefully selected. After soft pressing, the must ferments at a controlled temperature in steel tanks. The second fermentation takes place in an autoclave according to the Charmat (Martinotti) Method, with an aging on lees of about 2 months. This prolonged period compared to the denomination's standards allows for a finer perlage and greater aromatic complexity, while also ensuring superior natural stability.
Food Pairings Thanks to its low residual sugar, it is an extremely versatile sparkling wine at the table. Excellent as an aperitif, it excels with raw seafood appetizers, sea bass tartare, oysters, and grilled crustaceans.
