Sankt Pauls - Gewürztraminer Alto Adige DOC 2025: The Aromatic Gold

The 2025 Gewürztraminer by Sankt Pauls is a white wine that does not go unnoticed. "Gewürz" in German means spicy, and this wine is living proof: an explosion of exotic and floral scents that envelop the senses from the very first moment. The 2024 vintage benefited from excellent grape ripening, allowing for a masterful balance between the natural glyceric softness of the grape variety and a mineral freshness that enhances its drinkability. It is an intense, aristocratic, and profound wine, capable of providing a complex and satisfying sensory experience, perfect for those seeking a white wine with great personality.

Sensory Profile In the glass, it shines with a deep straw yellow color and intense golden reflections. The bouquet is a triumph of aromas: powerful notes of rose petals, lychee, and ripe exotic fruit (mango, pineapple) stand out, accompanied by delicate nuances of cloves, cinnamon, and acacia honey. On the palate, the entry is full, soft, and almost buttery, but immediately balanced by a mineral salinity that cleanses the palate. The finish is very long, with persistent aromatic returns and a pleasant spicy note.

Vinification and Aging The grapes are hand-picked at full aromatic maturity. To extract the maximum potential, the must undergoes a short cold maceration before fermentation, which takes place strictly in stainless steel tanks at controlled temperatures. Aging continues in steel on fine lees for several months; this choice preserves the purity of the varietal aromas and the intensity of the fruit, avoiding the use of wood, which could weigh down its already naturally rich profile.

Food Pairings A wine that loves culinary challenges. It is the ideal companion for spicy Asian cuisine (curries, sweet and sour dishes, sushi with wasabi). Excellent with savory crustaceans such as lobster or crayfish, and with blue or very aged cheeses. Also extraordinary as a meditation wine or paired with foie gras and liver pâté.
