The 2024 vintage has yielded grapes with a very fine aromatic profile, where notes of white-fleshed fruit blend with a chalky savoriness that directly recalls the Dolomite rocks of the San Paolo vineyards. Sensory Profile In the glass, it presents a pale straw yellow with luminous greenish reflections. The bouquet is delicate and refined: crisp notes of green apple, Kaiser pear, and wild flowers stand out, accompanied by a characteristic mineral nuance and a hint of bread crust. On the palate, the entry is fresh, taut, and vertical; the distinct acidity is balanced by good fruity pulp, making the sip harmonious and smooth. The finish is persistent, clean, and leaves a pleasant saline sensation.
Vinification and Aging The grapes are harvested manually in vineyards located at medium altitudes on calcareous detrital soils. After soft pressing, fermentation takes place in stainless steel tanks at controlled temperatures. To preserve the fragrance and typicality of Pinot Blanc, aging occurs exclusively in steel on fine lees for about 5-6 months. This technique allows the varietal freshness to remain intact, while also giving the wine a slight creaminess and greater complexity.
Food Pairings An extremely eclectic white wine for the table. It is the ideal pairing for Terlano asparagus, but also goes wonderfully with light appetizers, soups, cheese dumplings (knödel), and dishes based on freshwater or saltwater fish. Excellent with delicate white meats and fresh goat cheeses.
