The Pinot Grigio 2025 from Sankt Pauls is a wine of great character, capable of combining the typical softness of the grape with the sharp minerality of the calcareous soils of Appiano. The 2024 vintage benefited from excellent day-night temperature variations, which preserved an enviable citrusy freshness and a very delicate aromatic profile. It is not just an aperitif wine, but a well-rounded gastronomic white that shines with balance and stylistic purity. The touch of Cantina Sankt Pauls is evident in the precision of the sip and the ability to make this grape variety extremely territorial and distinctive.

Sensory Profile In the glass, it presents an intense straw yellow with bright golden reflections. The bouquet is rich and layered: notes of ripe pear, white melon, and hay flowers stand out, accompanied by a delicate hint of bread crust and a distinct mineral trail. On the palate, the entry is full, almost creamy, but immediately refreshed by a zesty acidic vein. The structure is substantial, with a persistent savoriness that recalls the Dolomite rock and a clean, long, and pleasantly almondy finish.

Winemaking and Aging The grapes are hand-harvested from vineyards located at medium altitudes (300-500 m a.s.l.) on morainic and calcareous soils. After soft pressing, fermentation takes place at controlled temperatures in stainless steel tanks. To enrich the taste profile and impart greater complexity, the wine ages exclusively in stainless steel on its fine lees for about 5-6 months. This prolonged contact with the yeasts results in a velvety texture while maintaining the varietal freshness intact.

Food Pairings An extremely versatile white wine. It is perfect with warm appetizers, flavorful fish soups, herb risottos, and cheese dumplings. It pairs magnificently with mushroom dishes, roasted white meats, and grilled fish. Thanks to its structure, it also pairs well with medium-aged cheeses and not-too-spicy Asian cuisine.
