Among the various Schiava varieties, "Grigia" is considered the noblest for the finesse of its aromas and the savory taste. The 2025 version by Sankt Pauls is a tribute to the peasant tradition of Appiano, reinterpreted with impeccable technical clarity.

Sankt Pauls' Schiava Grigia 2025 is the "everyday wine" of South Tyroleans elevated to standards of excellence. It comes from old vineyards located on morainic and calcareous soils, where this historic grape expresses subtle elegance and irresistible drinkability. If Lagrein is power and Pinot Noir is grace, Schiava Grigia is conviviality: a light red, pale in color but with a vibrant character, which focuses entirely on the freshness of the fruit and a mineral savoriness that constantly invites another sip. It is the perfect wine for those seeking Alpine authenticity in a nimble and modern form.

Sensory Profile In the glass, it presents with a light and transparent ruby red color, typical of the variety. The bouquet is delicate and fragrant: crisp notes of morello cherry, wild strawberry, and raspberry stand out, accompanied by the characteristic and unmistakable nuance of bitter almond and violet. On the palate, the entry is fresh, slender, and lively. The tannic texture is almost imperceptible, giving way to a pleasant savoriness and a clean, fruity finish that refreshes the palate.

Vinification and Aging The grapes are hand-harvested and vinified with controlled temperature fermentation in stainless steel tanks, with limited skin contact to preserve the pale hue and aromatic fragrance. To maintain freshness and varietal typicity, aging takes place exclusively in large wooden barrels and steel tanks. This process allows the wine to stabilize naturally without altering its fruity profile and natural lightness.

Food Pairings It is one of the rare reds that can be served slightly chilled (12-14°C). It is the inseparable companion of the South Tyrolean "Marende" based on speck, schüttelbrot, and local cheeses. Excellent with cold cut appetizers, traditional first courses (dumplings, spätzle), white meats, and light cooking.
