The Praeclarus Brut is a Metodo Classico that embodies the crystalline elegance of Alto Adige. Made from 100% Chardonnay grapes, this sparkling wine matures slowly in the Maison's historic underground cellars, benefiting from a constant microclimate that favors its evolution. It is a sparkling wine that focuses entirely on precision: the freshness of the Alps blends with the creamy texture typical of long aging on the lees, offering an aristocratic, taut, and very charming sip. A symbol of Sankt Pauls' mastery in creating internationally renowned sparkling wines.

Sensory Profile It presents a brilliant straw yellow color in the glass, enhanced by a very fine, persistent, and lively perlage. The bouquet is refined and complex: notes of Reinette apple, citrus, and white flowers blend with hints of bread crust, yeast, and a delicate nuance of toasted hazelnut. On the palate, it is savory, mineral, and vibrant. The distinct freshness is perfectly balanced by a velvety structure, which concludes with a long, clean, and pleasantly citrusy finish.

Winemaking and Aging The Chardonnay grapes are hand-picked and pressed with extreme delicacy. The first fermentation takes place at a controlled temperature, while the second fermentation in the bottle follows the strict dictates of the Metodo Classico. The wine rests on its lees for at least 48 months in the rock-hewn tunnels of the cellar, a necessary time to achieve the complexity and integration of the bubbles that make it unique.

Food Pairings It is an excellent aperitif wine, but its structure also makes it ideal for a full meal. It pairs perfectly with oysters, seafood crudités, sushi, fish-based first courses, and delicate risottos.
