Praeclarus Rosé is the most seductive and refined expression of Alto Adige's Metodo Classico. Made predominantly from Pinot Noir grapes, this sparkling wine embodies the elegance of a grape variety that finds its ideal habitat in the calcareous and cool soils of Appiano. The prolonged aging on the lees in the historic cellars of the Maison gives the wine extraordinary complexity: it is not just a sparkling wine of immediate pleasure, but a rosé with character, capable of combining an inviting drinkability with a structural depth that makes it perfect for fine dining.

Sensory Profile In the glass, it presents with a refined onion-skin pink color, with brilliant reflections and an extremely fine and persistent perlage. The bouquet is a delicate interplay of small red fruits (raspberry, wild strawberry) and rose petals, enriched by elegant notes of bread crust and sweet spices derived from aging. On the palate, the entry is fresh and lively, but immediately supported by a silky structure and a mineral savoriness typical of its terroir of origin. The finish is harmonious, clean, and leaves a pleasant trail of fresh wild berries.

Vinification and Aging The grapes are harvested manually and vinified with a brief cold maceration to extract the delicate chromatic tone and varietal aromas. Refermentation takes place in the bottle according to the Metodo Classico, followed by aging on the lees for at least 36-48 months in rock-hewn tunnels. This long resting period allows the Pinot Noir to perfectly integrate its strength with the creaminess of the bubbles, achieving impeccable balance.

Food Pairings An extremely versatile sparkling wine at the table. It is perfect as an excellent aperitif, but it performs best with noble cured meats (such as Alto Adige PGI Speck), beef carpaccio, flavorful fish like salmon or tuna, and pasta dishes with fresh tomato sauces or shellfish. Also excellent with medium-aged cheeses.
