Cruasé 2020 is a Brut Rosé sparkling wine of great personality, made from 100% Pinot Noir grapes harvested by hand in the estate's vineyards. The name "Cruasé" identifies the excellence of rosé sparkling wine production in Oltrepò, and Mazzolino's version stands out for its masterful balance between freshness and complexity. The 2020 vintage yielded perfectly ripe grapes, allowing for a sparkling wine base with a vibrant acidic backbone and a very fine aromatic profile. It's a sparkling wine that doesn't seek to please, but rather depth: dry, mineral, and endowed with that "gastronomic" structure that only great Pinot Noir can offer.
Sensory Profile In the glass, it presents a refined onion-skin pink with brilliant reflections; the perlage is very fine, persistent, and velvety. The bouquet is complex and fragrant: it opens with crisp notes of redcurrant, raspberry, and pomegranate, followed by elegant hints of bread crust, yeast, and a delicate nuance of faded rose petals. On the palate, the entry is savory and taut; freshness guides the sip, while the creaminess of the mousse envelops the wine's solid structure. The finish is long, clean, and leaves a pleasant mineral trail that recalls the estate's calcareous-clay terroir.
Vinification and Aging The grapes are harvested in crates and subjected to soft pressing with a very brief cold maceration to extract the delicate pink hue. The first fermentation takes place at a controlled temperature in steel tanks. After tirage, the secondary fermentation occurs in the bottle according to the Metodo Classico. The wine ages on its lees for at least 36 months (or longer depending on the disgorgement) in the darkness of the historic cellars, acquiring stability and the aromatic complexity that makes it unique.
Food Pairings A sparkling wine for the entire meal. Excellent as a prestigious aperitif, it is enhanced by Culatello di Zibello or noble cured meats. At the table, it magnificently accompanies crustaceans, smoked salmon, and fish soups. Surprising with delicate white meats, wild berry risottos, or oriental cuisine (sushi and tempura). Thanks to its structure, it also pairs well with medium-aged cheeses.
