Sensory Profile In the glass, it presents a pale cherry-pink color, clear and bright, with a fine perlage and an evanescent foam. The nose is an explosion of freshness: clear notes of wild strawberry, red currant, and pink grapefruit blend with elegant floral hints of violet and dog rose. On the palate, the entry is direct, dry, and extraordinarily refreshing; the natural acidity of Sorbara is the absolute protagonist, balanced by a mineral savoriness that cleanses the palate masterfully. The finish is long, clean, and leaves a pleasant citrus sensation.
Vinification and Aging The grapes from the organic hillside vineyards are harvested manually and vinified in white with soft pressing. Fermentation takes place in stainless steel tanks at a controlled temperature. The secondary fermentation (prise de mousse) occurs in an autoclave using the Charmat Method, a technical choice that preserves the primary aromas of the grape intact and ensures lively and silky bubbles. The wine is then bottled in conditions of absolute purity to maintain its characteristic brilliance.
Food Pairings The perfect companion for traditional Modenese dishes: gnocco fritto, savory cured meats (Prosciutto di Modena, Mortadella), tortellini, and green lasagna.
